Instructions

  1. Preheat the oven to 400°F.  Line a muffin tin with paper liners or grease well.
  2. Mix the dry ingredients. In a large bowl, whisk together the flour, oats, baking soda, baking powder, cinnamon, and salt until well combined.
  3. Combine the wet ingredients. In a separate bowl, whisk together the pumpkin purée, brown sugar (or maple syrup), milk, melted butter, eggs, and vanilla until smooth.
  4. Combine both mixtures. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix.
  5. Fill muffin cups. Divide the batter evenly, filling each muffin cup about ¾ full.
  6. Bake. Place in the preheated oven and bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and serve. Let the muffins cool in the pan for a few minutes before transferring to a wire rack. Serve warm or at room temperature.
